Wine is not a number ticking up. It is a living charge of must sitting in a numbered slot of your barrel wall, and where you put it decides everything. Cellar is an idle wine-cave sim built on POSITIONAL AGING. Every slot has a fixed microclimate: cool deep slots age wine slowly and cleanly, while warm high slots age fast but accrue volatility — a real risk the batch turns to vinegar.
